Interest Area

Development of Antioxidant/Anti arteriosclerotic Functional Materials that penetrate brain, liver, etc. tissues in edible plants (Developing of lignan-contingent functional unit extract material for neuroprotection action and the prevention against atherosclerosis)
- Existing antioxidants act as prooxidants or have limitations in their in vivo transmission, etc. In particular, the number of elderly people has increased, and the number of senile brain diseases such as Parkinson's disease and Alzheimer's disease has soared, making it a serious social problem. To curb oxidative damage to brain tissue, antioxidants must pass through the blood-brain-barrier (BBB). In order to find natural antioxidants that have few side effects and have favorable biomass penetration, the anti-oxidation indicators of brain tissue were evaluated after scouring many edible plants and selecting food extracts that have high efficacy and administering them In other words, in the in vivo system, an antioxidant extract was assessed to have penetrated the brain tissue and thus inhibited oxidative damage to the brain tissue by NMDA and kinette. After many years of research, the company secured an antioxidant substance of lignan system, which is a non-controactive compound with a high brain invasion from edible plant extract, and applied for and registered patents at home and abroad. In addition, it is conducting research to discover, structure and assess functional food materials by exploring, identifying and evaluating substances that can defend against the oxyidative stress, a major factor of arteriosclerosis.

Food development and functional evaluation using functional food materials 
- Many recent studies have shown that many food products are manufactured in the form of tablet, powder, and capsule by many food and drug companies and sold as healthy foods, consuming only some health-conscious people. In this lab, functional food materials are added to foods that are appropriate for each class, such as children, students, housewives, office workers, senior citizens and patients, so that a variety of nutrition control groups can conveniently consume them. In addition, these functional food materials are difficult to consume due to their unique smell and color, so they are being researched to maintain nutritional and functional ingredients while processing them into sensual and excellent food materials. After years of research, the lab developed a β-glucan-added bread and sponge cake that represent various functions such as lowering blood cholesterol, activating immune cells, and preventing skin aging, and developed antioxidant and antioxidant, immune, fatigue recovery, and antioxidants, which contain a variety of essential amino acids, carotenoids, and Picocyanins, and other antioxidants.

Development of special foods (patient, infantile, geriatric, food for soldiers and astronauts) 
- Infants, patients, senior citizens, soldiers, and astronauts, who are in a class that needs different nutritional management from ordinary people, should take the appropriate form and nutritional content of their respective situations. Therefore, this lab develops and researches food for patients, infants and the elderly with weak digestion and immune systems, respectively, and develops and studies food for meals that can be stored for long-term storage and provide sufficient nutrition.

- Salted shrimp and quality evaluation according to saline concentration, ripening temperature and salt type
- Developing methods for making high-quality pickled cucumbers and condiments 
- Analyze the composition of sulfide compounds and evaluate the functionality of radish Kimchi 
- Analyze the components of volatile sulfide compounds in garlic pickled vegetables and evaluate their functionality
